This recipe is very calming. I came up with it one midnight when I was
feeling winter inside and out. It is inspired by Indian cuisine. I call
it "Rice and Snail Glue" because it keeps me from blowing away
on a cold or anxious day.
1 1/2 C basmati rice
2 tsp garam masala (1 for rice, 1 for mixture)
1 1/4 C Snails (pre-boiled)
2 T fresh basil
2 T fresh parsley
2 T lime juice (1 lime)
1 T Olive oil
1 T almond butter
1/4 C light coconut milk
1/2 tsp sugar
dash of salt
optional: naan (Indian bread)
note: I use organic whenever I can. No surprise there.
Directions: Steam rice with 1 tsp ground garam masala in the water. While
that is happening, blend snails, basil, and parsley in a food processor
or blender until it is the consistency of olive tapenade (a paste of bits).
Put mixture into a 1 quart mixing bowl. Add juice of 1 lime, 1 T olive
oil, almond butter,remaining tsp garam masala, salt, coconut milk, and
sugar. Stir until well combined--thick batter.
Put rice on plates, add big dollop of snail glue. I mix it all together
and consume with naan. When rice is hot, naan is warm, and the snail mixture
is room temp=delicious!!
